We set the menu each week based on what our suppliers currently have in season. Much of what you are served is sourced within a radius of two kilometers. The table water served still or carbonated is drawn from our own groundwater source. The mushrooms are picked in the forests around Yngern and the honey comes from our own beehives. The nettles, herbs, rhubarb, rosehips, and lilacs in your salad are picked by ourselves on our own land.
